Irish whiskey o ½ ounce Cointreau o 6 ounces strong hot coffee Garnish o whipped cream o green Crème de Menthe (optional) Method: 1. Combine cocktail ingredients in a warmed glass mug. 2. Top with whipped cream. 3. Drizzle with Crème de Menthe, or not. Remarks: This is a remarkably pleasant, caffeinated cocktail. You can either mix a splash of green Crème de Menthe in the cream as you whip it or drizzle some on top as you serve it. Or you could skip it altogether if you are uneasy being green. . . .

PH factor: 9.0 Recipe (Serves Two) Ingredients: Cocktail o 2 ounces Hennessey VS cognac o 1 ounce Kahlúa o 1 ounce Sandeman Porto Tawny 20 Year Old o 8 ounces cold strong coffee or 2 double espressos o 2 teaspoons sugar o 1 dash Angostura bitters o 1 dash Hella orange bitters o 1 ½ ounces cream o 1 egg Method: 1. Shake cocktail ingredients without ice. 2. Add ice and shake again to chill. 3. Fine strain into ice-filled double Old Fashioned glasses. Remarks: To get the Dude reference you may need to have seen the film The Big Lebowski. You do not need to have seen the movie to enjoy this creamy, rich, and tasty, caffeinated cocktail. . . .

PH factor: 8.0 Recipe Ingredients: Cocktail o 4 ounces strong hot coffee o 2 teaspoons brown sugar o 1 ½ ounces Quiet Man Irish whiskey Garnish o heavy cream, lightly whipped Method: 1. Combine sugar and coffee in a warm mug or glass and stir to dissolve the sugar. 2. Add whiskey and stir to combine. 3. Float cream onto coffee. Combine cocktail ingredients in a heated cup or mug. 2. Top with whipped cream. 3. Garnish with orange zest and cinnamon stick. Remarks: This started as a play on the words "triple crown". We were looking for a coffee drink to toast a horse that we toasted on Derby Day, at the Preakness, and at Belmont. That long shot turned out to be a winner. Of course, feel free to use your whiskey or whiskies of choice but come on triple Crown Royal. . . .

PH factor: 9.5 Recipe Ingredients: Cocktail o 2 ounces Tullamore DEW Irish whiskey o 6 ounces strong hot coffee o 1 ounce Demerara Syrup, see: Syrups etc. Garnish o whipped cream flavored with a dash of orange extract o grated nutmeg o grated orange zest Method: 1. Combine cocktail ingredients in a warmed mug. 2. Top with whipped cream. 3. Garnish with orange zest and grated nutmeg. Remarks: The orange flavor and aroma make such a difference that it is worth the effort to grate some orange zest onto the whipped cream. Trust us. . . .
- Turkish Coffee Cocktail
PH factor: 9.0 Recipe Ingredients: Cocktail o 8 whole cardamom pods o 2 ounces Finlandia vodka o ½ ounce Simple Syrup, see: Syrups etc. o 2 ounces espresso Garnish o lemon peel Method: 1. Muddle cardamom in a cocktail shaker. 2. Add ice and remaining cocktail ingredients and shake to chill. 3. Fine strain into a cocktail glass. 4. Garnish with lemon peel. Remarks: This recipe is different to the point of being unique. You can drink this anytime you like but it is especially good at the end of a satisfying lunch or dinner. . . .
- Vanilla Cream Martini
PH factor: 9.0 Recipe Ingredients: Cocktail o raw sugar o 2 ounces Finlandia vodka o ½ ounce Licor 43, Cuarenta y Tres o double espresso Garnish o lightly whipped cream o orange or lemon peel Method: 1. Moisten the rim of a chilled martini glass and invert it into a shallow dish of raw sugar to coat the rim of the glass. 2. Stir remaining cocktail ingredients over ice in a mixing glass. 3. Strain into the prepared glass. 4. Top with cream. 5. Garnish with peel. Remarks: Originally this recipe didn't have the Licor 43. It tasted to us like espresso diluted with vodka and topped with cream. We think the addition of Licor 43 to the mix made a massive improvement. . . .
