    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 ½ ounces Chivas Regal scotch o ½ ounce blue Curaçao o 1 healthy pinch of a mixture of cinnamon and sugar Method: 1. Combine spirits in a wine glass and ignite. 2. Pour into another glass from a height. 3. Toss in cinnamon sugar. 4. Extinguish and pour into a shooter glass. Remarks: If you choose to flame this, we suggest that you first warm the spirits. Flamed or not this is a tasty drink due in large part to the cinnamon. Give the dragon a healthy pinch. Lightly muddle the mint in a collins glass to release the essential oils. 2. Add ice and remaining cocktail ingredients except champagne and stir to chill. 3. Top with champagne. 4.     PH factor:  9.0 Recipe Ingredients: Cocktail o 2 ounces Bombay gin o ½ ounce Boulard Calvados VSOP o ¼ ounce fresh lemon juice o ½ ounce grenadine or to taste o egg white Garnish        o 1 Tillen Farms Merry Maraschino cherry Method: 1. Shake without ice. 2. Add ice and shake again. 3. Serve up in a cocktail glass. Remarks: This is a tasty drink with or without the egg white. In fact, you may want to try it first without egg white to get the flavor the way you like it and then add the egg white to the subsequent ones you make. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail o 2 ounces Quiet Man Irish whiskey o ½ ounce Boulard Calvados VSOP o ½ ounce fresh lemon juice o ½ ounce grenadine o 1 splash of Fever-Tree Premium Club Soda (optional) Garnish o lemon peel o Tillen Farms Merry Maraschino cherry Method: 1. Shake cocktail ingredients except soda over ice. 2. Serve up in a cocktail glass. 3. Top with soda, if using. 4. Garnish with lemon peel and a cherry. Remarks: When we first tested this we found it to be a pleasant drink. Increasing the Irish whiskey, as above made it even better. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail o salt o 1 ounce 1800 Añejo tequila o 1 ounce Boulard Calvados VSOP o 1 ounce Grand Marnier o ½ ounce grenadine o ½ ounce fresh lemon juice Garnish o lemon twist Method: 1. Moisten the rim of a martini glass and invert it into a shallow dish of salt to coat the rim of the glass. 2. Shake remaining cocktail ingredients over ice. 3. Serve up in the prepared glass. 4. Garnish with lemon twist. Remarks: If this seems too sweet to you there's the reduce the Grand Marnier solution. Increasing the tequila might also work. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 ½ ounces Boulard Calvados VSOP o ½ ounce Lillet Rouge o 1 dash Hella Orange bitters Garnish o orange twist Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Strain into a cocktail glass. 3. Garnish with a twist of orange. Remarks: The Marconi was created at the bar in the Waldorf Astoria in 1903 to celebrate the first Trans- Atlantic radio transmission. That first conversation took place between President Theodore Roosevelt and King Edward, the VII. Though there is no record, the conversation may have gone something like this: “Hi Eddie”. “Hey Teddy”. “Pretty cool. Right?” “Yup.” . . .

Do try to find grenadine that is actually made from pomegranates and that has no high-fructose corn syrup. Remember, it’s not the alcohol that is dangerous to your health, it’s the grenadine. . . .
