Blend cocktail ingredients until smooth. 2. Serve in a large glass mug. 3. Top with whipped cream and garnish with cocoa and and blackberries. Remarks: A delicious way to end a meal or a perfect late night snack. . . .

    PH factor:  9.0 Recipe (Serves Two) Ingredients: Cocktail o 4 ounces Hennessey VS cognac o 8 ounces cold strong coffee o 1 tablespoon sugar o 6 ounces champagne Method: 1. Stir cocktail ingredients except champagne in a pitcher. 2. Refrigerate until ready to serve. 3. Divide into champagne flutes. 4. Add champagne and stir gently. Remarks: It’s not easy to find recipes that combine coffee and champagne. This one tastes like an iced coffee with a sparkle in its eye. . . .

    PH factor:  9.0 Recipe Ingredients: Cocktail o ½ ounce Hennessey VO cognac o ½ ounce Grand Marnier o ½ ounce Kahlúa o 4 ounces strong hot coffee Garnish o sweetened whipped cream o orange peel Method: 1. Stir cocktail ingredients in a glass mug. 2. Top with whipped cream. 3. Garnish with orange peel. Remarks: A cocktail is seldom named so aptly. Is it hot and boozy? Yes. Is that exactly how we like it? Absolutely. . . .

  • Sloe Gin and Elderflower Collins

    PH factor:  8.0 Recipe Ingredients: Cocktail o 1 ounce St. Germain liqueur o 1 ½ ounces Plymouth Sloe Gin o ½ ounce fresh lemon juice o ½ ounce Simple Syrup, see: Syrups etc. o 3 ounces Fever-Tree Premium Club Soda Garnish o lemon wheel Method: 1. Shake cocktail ingredients except soda over ice. 2. Strain into an ice-filled collins glass. 3. Top with soda and stir gently. 4. Garnish with a lemon wheel. Remarks: This is a hard one to define. It definitely has a fruity taste but we are not exactly sure which fruit that is. . . .

  • Lemon Rum Iced Coffee

    PH factor:  8.0 Recipe (Serves Two) Ingredients: Cocktail o 2 ounces Mount Gay XO rum o 4 ounces cold espresso or coffee o 8 ounces ice water o 1 ½ tablespoons Demerara sugar Garnish o 2 thick slices of lemon halved Method: 1. Stir cocktail ingredients over ice in a mixing glass to dissolve the sugar and to chill the mixture. 2. Serve over ice in glasses or mugs. 3. Garnish with lemon slices equitably divided. Remarks: This can also be made by the pitcher. Simply increase the above amounts by the number of quests. We suggest you not make extra. The dilution from the melting ice could become a problem. . . .

  • Rum-Spiked Coconut Coffee

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 ½ ounces Mount Gay XO rum o 4 ounces cold coffee or espresso o 2 ounces coconut milk Garnish o whipped cream o shredded coconut o grated chocolate Method: 1. Lightly toast shredded coconut. 2. Shake cocktail ingredients over ice. 3. Serve up in glass mug or large cocktail glass. 4. Top with whipped cream. 5. Garnish with toasted coconut and grated chocolate. Remarks: Yes, it's unusual and effort is required. However, there are warm summer afternoons and evenings calling out for this cocktail. Method: 1. Shake cocktail ingredients over ice. 2. Serve over ice in a collins glass. 3. Garnish with a lime wedge. Remarks: Familiar with honeysuckle? This is a tasty way to immerse yourself in the honeysuckle experience. It’s an experience I can heartily recommend. Try this and you too will become a honeysuckle lover.     PH factor:  9.0 Recipe Ingredients: Cocktail o 2 ounces 1800 Añejo tequila o 1 ounce Kahlúa or Patrón XO Cafe o 2 ounces cold espresso or coffee o 1 dash Hella Orange bitters or to taste Garnish o whipped cream o ground cinnamon o ground cloves Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve up in cocktail glass. 3. Top with whipped cream. 4. Garnish with cinnamon and cloves. Remarks: We used Patrón XO Café and Illy medium roast Arabica and found that together they made a delicious cup of coffee. Try it, or use your own favorites . . .

  • Kahlúa and Rum Coconut Coffee

    PH factor:  8.5 Recipe (Serves Two) Ingredients: Cocktail o 3 ounces Mount Gay XO rum o 1 ounce Kahlúa o 8 ounces cold strong coffee o 3 ounces coconut milk Garnish o whipped cream o cocoa powder Method: 1. Shake cocktail ingredients over ice. 2. Serve up in glass mugs or large cocktail glasses. 3. Top with whipped cream and garnish with cocoa powder. Remarks: Light but not sweet. Coconutty though not in a crazy way. We used Lavazza Gran Selezione coffee. You might try a double shot of your favorite espresso, if you want more depth. . . .

  • Little Egypt Cocktail

    PH factor:  8.0 Recipe Ingredients: Cocktail o ¼ ounce Pernod Absinthe Supérieure o 1 ounce Amontillado sherry o 1 ounce Lillet Blanc o 1 bar spoon Lillet Rouge o 4 dashes Angostura bitters Garnish o orange peel Method: 1. Swirl absinthe in chilled cocktail glass and discard the excess. 2. Stir remaining cocktail ingredients over ice in a mixing glass. 3. Strain into the prepared glass. 4. Garnish with orange peel. Remarks: Oft times different is better. Sometimes different is just different. Having said that, if you are in the mood for something different… . . .

  • Lillet Martini Cocktail

    PH factor:  8.5 Recipe Ingredients: Cocktail o ½ ounce Grey Goose vodka o 2 ounces Lillet Rosé o ½ ounce St. Germain liqueur o ¾ ounce fresh lemon juice o ½ ounce Simple Syrup, see: Syrups etc. Garnish o lemon twist Method: 1. Shake cocktail ingredients over ice. 2. Serve up in a martini or cocktail glass. 3. Express lemon peel over glass and discard. Remarks: This is a light and enjoyable cocktail. Grey Goose and St. Germain go well together, and this cocktail will go well with most foods. . . .
