PH factor: 8.0 Recipe Ingredients: Cocktail o 1 ½ ounces Pimm’s No.1 Cup o 4 ounces strong coffee or espresso Garnish o 1 ounce lightly whipped cream o ground cinnamon Method: 1. Combine coffee and liqueur in a glass mug. 2. Float cream on top. 3. Dust with cinnamon Remarks: If you use espresso, you may want to add some sweetener. Perhaps extra confectioners' sugar in the whipped cream would do the trick. . . .

PH factor: 9.0 Recipe Ingredients: Cocktail o 1 ½ ounces Johnnie Walker Red Label scotch o ¾ ounce Drambuie o ¼ ounce fresh lemon juice o 2 ounces cold coffee or espresso Garnish o lemon peel Method: 1.
