  • Ginger Mint Paloma

    PH factor:  9.0 Recipe Ingredients: Cocktail o 6 mint leaves o 2 ounces 1800 Reposado tequila o 1 ½ ounces grapefruit juice o 1 ounce fresh lime juice o 1 ounce Ginger Honey Simple Syrup, see: Syrups etc. Garnish o mint sprig Method: 1. Lightly muddle mint leaves in a cocktail shaker. 2. Add ice and remaining cocktail ingredients and shake. 3. Pour entire contents into a highball glass. 4. Garnish with mint sprig. Remarks: Grapefruit and tequila go well together here as in many other cocktails. The ginger and mint however separate this from the rest. . . .

  • Scottish Cocoa

    PH factor:  8.5 Recipe (Serves Two) Ingredients: Cocktail o 8 ounces Godiva Hot Cocoa o 2 ounces Drambuie o 1/8 teaspoon ground cinnamon o 1/8 teaspoon kosher salt Garnish o whipped cream o miniature marshmallows Method: 1. Prepare cocoa per the package directions. 2. Combine with remaining cocktail ingredients. 3. Divide between 2 cups or glass mugs. 4. Top with whipped cream. 5. Garnish with charred miniature marshmallows, if you feel you must. Remarks: Since this is already a sweet, chocolatey, and very tasty caffeinated cocktail you may ask, why add marshmallows? Good question. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail o 2 ounces Heaven’s Door Tennessee bourbon o ¾ ounce Honey Syrup, see: Syrups etc. o ¾ ounce fresh lemon juice Garnish o lemon peel Method: 1. Shake cocktail ingredients over ice. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with lemon peel. Remarks: A refreshing cocktail. You taste the lemon and honey despite the fact that it's mostly bourbon. . . .

  • Cabernet Chocolate Latte

    PH factor:  9.5 Recipe Ingredients: Cocktail o 1 ounce Godiva Chocolate liqueur o 1-2 tablespoons Cabernet Syrup, see: Syrups etc. o double espresso o ¼ cup milk frothed Garnish o grated chocolate Method: 1. Add cocktail ingredients except milk to a cup or mug and stir. 2. Top with frothed milk. 3. Garnish with a dusting of grated chocolate. Remarks: This is a little sweet, but the ingredients play well together. . . .

    PH factor:  9.0 Recipe Ingredients: Cocktail o ½ ounce Bombay gin o ½ ounce Campari o ¾ ounce Lillet Rouge o ¼ ounce Simple Syrup, see: Syrups etc. o 1 espresso Garnish o 3 ounces frothed milk Method: 1. Add cocktail ingredients to a heated mug. 2. Top with frothed milk. Remarks: An interesting combination of flavors and a real eye-opener. . . .

  • Blood Moon Cocktail

    PH factor:  8.5 Recipe Ingredients: Cocktail o 2 ounces Blood Orange Infused Vodka, see: Syrups etc. o 1 ounce fresh blood orange juice o ½ ounce Rosemary Simple Syrup, see: Syrups etc. o Rosé champagne Garnish o blood orange peel Method: 1. Shake cocktail ingredients except wine over ice. 2. Strain into an ice-filled collins glass. 3. Top with sparkling wine. 4. Garnish with blood orange peel. Remarks: The bitterness of the blood orange saves this from being just another pretty cocktail. . . .

  • Tennessee Rose Cocktail

    PH factor:  9.0 Recipe Ingredients:       Cocktail o 2 ounces Heaven’s Door Straight Rye whiskey o ½ ounce Crème de Cassis o ½ ounce grapefruit juice o ½ ounce Rose Petal Syrup, see: Syrups etc. o 1 dash Peychaud’s Bitters or to taste Garnish o ½ grapefruit wheel Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with ½ grapefruit wheel. Remarks: All right, grapefruits aren’t the easiest things to squeeze, and you are not likely to find Rose Petal syrup on the shelves of a supermarket near you. You'll will have to make it yourself, see: Syrups etc. But, neither task is all that difficult and if you mix them with one of the finest rye whiskeys Tennessee has to offer, you'll have a drink that's well worth the effort. . . .

  • Ginger, Pear, and Bourbon Cocktail

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 teaspoon fresh ginger o 2 ounces Woodford Reserve bourbon o 1 ounce Pear Syrup, see: Syrups etc. o ½ ounce Honey Syrup, see: Syrups etc. o ½ ounce fresh lemon juice o Fever-Tree Premium Ginger Beer Garnish o pear slice o lemon wheel Method: 1. Muddle ginger in a cocktail shaker. 2. Add ice and remaining cocktail ingredients except the ginger beer and shake to chill. 3. Serve over ice in a double Old Fashioned glass. 4. Top with ginger beer and stir lightly to combine. 5. Garnish with a thin slice of pear and lemon wheel. Remarks: Ginger and pear play well together and with others, notably bourbon. Enjoy. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 cup peeled and cubed mango o 5 tarragon leaves o 2 ½ ounces Mango Infused Vodka, see: Syrups etc. o ½ ounce fresh lemon juice o ½ ounce Mango Syrup, see: Syrups etc. Garnish o tarragon sprig Method: 1. Muddle mango and 5 tarragon leaves in a cocktail shaker. 2. Add ice and remaining cocktail ingredients and shake. 3. Fine strain into martini glass. 4. Garnish with tarragon. Remarks: Alternatively, you could puree fresh mango with enough water to make it drinkable. Of course, this “muddles” the definition of martini even more. . . .

  • Pear Brûlée Cocktail

    PH factor:  9.0 Recipe Ingredients: Cocktail o sliced pear o 3 ounces Mount Gay XO rum o ¾ ounce Cinnamon Thyme Syrup, see: Syrups etc. o ¾ ounce Pear Syrup, see: Syrups etc. o ½ ounce fresh lemon juice Garnish o 2 Brûlée pear slices o 1 cinnamon stick Method: 1. Cover pear slices with sugar then using a torch, melt the sugar until it is golden and bubbly. 2. Shake remaining cocktail ingredients over ice to chill. 3. Serve up in a cocktail glass. 4. Garnish with Brûlée pear slices and cinnamon stick. Remarks: This cocktail is crazy sweet but in a good way. It does require some effort but is easier than baking a pear tart and there are no crumbs. . . .

  • Spiced Orchard Pear Cocktail

    PH factor:  9.0 Recipe Ingredients:       Cocktail    o 2 ounces Johnnie Walker Red Label scotch o ½ ounce Grand Marnier o ½ ounce Star Anise Spiced Pear Syrup, see: Syrups etc. o ½ ounce Autumn Spiced Pear Syrup, see: Syrups etc. o ¼ ounce fresh lemon juice o 1 ounce Fever-Tree Premium Club Soda Garnish o cinnamon stick Method: 1. Shake cocktail ingredients except soda over ice. 2. Serve up in cocktail glass. 3. Top with soda. 4. Garnish with cinnamon stick. Remarks: You may also light one end of a cinnamon stick and invert the glass over it to capture the smoke while you prepare the cocktail. . . .

  • Lavandou Cocktail

    PH factor:  9.0 Recipe Ingredients: Cocktail o 1 ¾ ounces Hennessy VS cognac o ½ ounce Honey Syrup, see: Syrups etc. o ½ ounce Lavender Syrup, see: Syrups etc. o ¾ ounce fresh lemon juice Garnish o lavender sprig Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with a lavender sprig. Remarks: Honey and lavender are made for each other. They also make this cocktail a little sweet. If that is okay with you, excellent. If it is not and you want to solve the problem. We suggest you try the 7% solution. Add about 7% more cognac. . . .
