Pear Brûlée Cocktail

Ingredients:

Cocktail

o sliced pear

o 3 ounces Mount Gay XO rum

o ¾ ounce Cinnamon Thyme

Syrup, see: Syrups etc.

o ¾ ounce Pear Syrup, see: Syrups etc.

o ½ ounce fresh lemon juice

Garnish

o 2 Brûlée pear slices

o 1 cinnamon stick


Method:

1. Cover pear slices with

sugar then using a torch, melt

the sugar until it is golden and

bubbly.

2. Shake remaining cocktail

ingredients over ice to chill.

3. Serve up in a cocktail glass.

4. Garnish with Brûlée pear

slices and cinnamon stick.


Remarks:

This cocktail is crazy sweet but

in a good way. It does require

some effort but is easier than

baking a pear tart and there are

no crumbs.
