Add in order, condensed milk, brandy, and Licor 43 to a glass mug or cup. 2. Gently pour coffee over the back of a spoon. 3. Gently pour evaporated milk over the back of a spoon on top of the coffee layer. 4. Garnish with ground cinnamon, lemon peel and coffee beans. Remarks: Proper assembly can make a flavor journey from sweet to bitter and then back to sweet. Enjoy the trip. . . .

    PH factor:  9.5 Recipe Ingredients: Cocktail o 1 ½ ounces Finlandia vodka o ½ ounce dark Crème de Cacao o ½ ounce Kahlúa o ½ ounce Licor 43, Cuarenta y Tres o 1 large scoop vanilla ice cream Method: 1. Shake cocktail ingredients except ice cream over ice. 2. Strain into martini glass. 3. Top with ice cream. 4. Serve with a spoon and a smile. Remarks: Never thought of putting ice cream in your martini? Think again. . . .

  • Old Bell Sherry Cocktail

    PH factor:  10 Recipe Ingredients: Cocktail o ¼ ounce Pernod Absinthe Supérieure o 2 ounces Woodford Reserve bourbon o ½ ounce Licor 43, Cuarenta y Tres o ½ ounce Amontillado sherry o 1 dash Hella Orange bitters Garnish o thin orange slice Method: 1. Swirl absinthe to coat the inside of a cocktail glass and discard excess. 2. Stir remaining cocktail ingredients over ice in a mixing glass. 3. Strain into the prepared glass. 4. Garnish with orange slice. Remarks: Even though the cocktail glass is only coated with absinthe, it is the defining taste of this cocktail. . . .

    PH factor:  9.5 Recipe Ingredients: Cocktail o 1 ½ ounces Finlandia vodka o 1 ounce light Crème de Cacao o ½ ounce Licor 43, Cuarenta y Tres o ¼ ounce strawberry jam o 2 ounces Lindemans Strawberry Lambic Method: 1. Drizzle chocolate syrup on the inside of a large cocktail glass. 2. Shake cocktail ingredients except lambic over ice. 3. Strain into the prepared glass. 4. Top with lambic. Remarks: You will taste the chocolate in this one. We used Ghirardelli Premium Chocolate Sauce but feel free to use your favorite. We originally intended Cupid’s Arrow to be a Valentine’s Day cocktail. However, if you like chocolate and strawberry, and who doesn’t, you don’t have to wait. . . .

    PH factor:  8.0 Recipe Ingredients: Cocktail o 1 ¼ ounces Remy Martin VSOP cognac o ¾ ounce Licor 43, Cuarenta y Tres o 2 teaspoons Lillet Rouge o 2 ounces fresh orange juice Garnish o lemon twist Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve up in a chilled cocktail glass. 3. Garnish with lemon twist. Remarks: This is a good combination of ingredients though we feel the proportions may need a bit of tweaking. Perhaps less orange juice or perhaps less Cuarenta y Tres would do it. More cognac may also be the answer. That gets our vote. . . .

    PH factor:  9.5 Recipe Ingredients: Cocktail o 2 ounces Bombay Sapphire gin o ½ ounce Licor 43, Cuarenta y Tres o ½ ounce Lillet Blanc o 1 dash Peychaud’s bitters or to taste Garnish o lemon twist Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve up in martini glass. 3. Garnish with a lemon twist. Remarks: The Licor 43 makes you think dessert martini and it would be a delicious ending to a three martini lunch. . . .

Shake cocktail ingredients over ice. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with lemon peel. Remarks: The drink that started it all and the first of many answers to the question, “What are we going to do with the rest of this bottle?” . . .

    PH factor:  9.5 Recipe Ingredients: Cocktail o sugar o lime zest o 1 ½ ounces Finlandia vodka o ½ ounce Cointreau o ½ ounce Licor 43, Cuarenta y Tres o 1 ounce Key Lime Simple Syrup, see: Syrups etc. o 1 ounce pineapple juice Garnish o lime wheel Method: 1. Moisten the rim of martini glass and invert it into a shallow dish containing a mixture of sugar and lime zest to coat the rim of the glass. 2. Shake remaining cocktail ingredients over ice. 3. Strain into the prepared glass. 4. Garnish lime wheel. Remarks: If you like Key Lime Pie ? Then you have got to try this martini. The mix of the Key Lime Syrup and pineapple will taste very familiar to all you pie lovers. . . .

Moisten the rim of a martini glass and invert it into a shallow dish containing a mixture of sugar and spice. 2. Shake remaining cocktail ingredients over ice. 3. Serve up in the prepared glass. 4. Garnish with whipped cream and a cinnamon stick. Remarks: The original recipe called for more cream. We reduced it and increased the Pumpkin Spice Syrup as above. . . .
