    PH factor:  8.5 Recipe: Ingredients: Cocktail o 1 ounce 1800 Silver tequila o 1 ounce Patrón XO Cafe o 2 ounces espresso Method: 1. Combine in a cup or mug. 2. Enjoy. Remarks: This caffeinated cocktail gets all its flavor from the liqueur and strength from the tequila. If you want the coffee to play a bigger role you’re going have to reduce the other two ingredients which would be a shame. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail       o 2 ounces 1800 Añejo tequila o 4 ounces orange juice o ¾ ounce grenadine Garnish o orange wheel o Tillen Farms Merry Maraschino cherry Method: 1. Stir tequila and orange juice over ice in a highball glass. 2. Float grenadine on the drink. 3. Garnish with a cherry and an orange wheel and let settle. Remarks: The above version of the Sunrise has largely replaced the original cocktail which was created at the Biltmore Hotel in Phoenix Az. in the1930s and was made with Crème de Cassis and soda. . . .

  • Wakayama Thyme Champagne Cocktail

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 wedge of a pitted plum o 2 thyme sprigs o 1 ounce Plum Gekkeikan wine o ½ ounce fresh lemon juice o champagne Garnish o plum slices o thyme sprig Method: 1. Muddle plum and thyme in a cocktail shaker until your arm gets tired. 2. Add ice, plum wine, and lemon juice and shake to chill completely. 3. Fine strain into an ice-filled cocktail glass. 4. Top with champagne. 5. Garnish with additional plum slices and thyme sprig. Remarks: Nobody said champagne cocktails were gonna be easy. . . .

  • Lemon Drop (Variation)

    PH factor:  9.0 Recipe Ingredients: Cocktail o sugar o 2 ounces Finlandia vodka o ¾ ounce Triple Sec o ¾ ounce freshly squeezed lemon juice o 1 teaspoon sugar Garnish o lemon wheel Method: 1. Moisten the rim of a martini glass with lemon juice and invert glass into a shallow dish of sugar to coat the rim. 2. Shake remaining cocktail ingredients vigorously over ice. 3. Serve up in the prepared glass. 4. Garnish with lemon wheel. Remarks: For all you lemon lovers, this one's for you. Enjoy the pucker. . . .

  • Spanish Coffee

    PH factor:  9.5 Recipe Ingredients: Cocktail o sugar o 1 ounce Pedro Domencq Fundador brandy o ½ ounce Cointreau o ½ ounce Tia Maria o 4 ounces hot coffee or espresso Garnish o whipped cream o chocolate shavings or cinnamon Method: 1. Moisten the rim of a glass mug and invert it into a shallow dish of sugar to coat the rim of the glass. 2. Warm and ignite the Cointreau and pour it into the prepared mug. 3. Add remaining cocktail ingredients. 4. Top with whipped cream. 5. Garnish with cinnamon or chocolate shavings. Remarks: A real caffeinated cocktail.The taste of coffee is not diminished at all by the other ingredients. . . .
