    PH factor: 9.0 Recipe Ingredients: Cocktail o 2 ounces Johnnie Walker Red Label scotch o ¼ ounce Amontillado sherry o ¼ ounce Grand Marnier o ½ ounce Lillet Blanc o ¼ ounce Simple Syrup, see: Syrups etc. Garnish o orange peel Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve up in a cocktail glass. 3. Garnish with orange peel. Remarks: Questions arise immediately. For instance, why would you name a cocktail after a church? You wouldn’t name a church after a cocktail, would you? Questions may arise, but one thing is beyond question. This is one good cocktail. . . .

  • Papa Doble Daiquiri

    PH factor: 9.5 Recipe Ingredients: Cocktail o 3 ½ ounces Flor de Caña Extra Seco rum o ¾ ounce Luxardo Maraschino o 1 ounce grapefruit juice o 1 ounce fresh lime juice o ½ ounce Simple Syrup, see: Syrups etc. Garnish o lime wheel or wedge Method: 1. Shake cocktail ingredients over ice. 2. Strain into a martini or large cocktail glass. 3. Garnish with lime wheel or wedge. Remarks: Similar to Papa Hemingway's suggested Daiquiri. Similar, but we use more than the 6 drops of Maraschino that Papa liked. We also added simple syrup which he would not have liked. This can be blended with cracked ice. Mmm, Papa like. . . .

  • Peat’s Dragon

    PH factor: 10 Recipe Ingredients: Cocktail o 1 ½ ounces Johnnie Walker Black Label scotch o 1 ounce Ilegal mezcal o ½ ounce Manzanilla sherry o ½ ounce agave nectar o ¼ ounce fresh lemon juice Garnish o lemon wheel dehydrated or torched o ½ thinly sliced orange wheel Method: 1. Shake cocktail ingredients over ice. 2. Serve over ice in an Old Fashioned glass. 3. Garnish with lemon wheel and orange slice. Remarks: Peat in terms of scotch equals smoky. Smoky makes sense as we are talking about a fire breathing dragon. That being said we used Johnnie Walker Black Label which is only a wee bit peaty. For more smokiness use a single malt from Islay like Laphroaig or Talisker. . . .

  • Pensacola Bushwhacker

    PH factor: 9.0 Recipe (Serves Two) Ingredients: Cocktail o 1 ounce Mount Gay Eclipse rum o 1 ounce dark Crème de Cacao o 2 ounces Kahlúa o 4 ounces cream of coconut o 4 ounces Half and Half o 2 scoops vanilla ice cream Garnish o whipped cream o Tillen Farms Merry Maraschino cherries Method: 1. Combine cocktail ingredients with ice in a blender and blend until smooth. 2. Serve up in hurricane glasses. 3. Garnish with whipped cream and cherries. Remarks: It would be easy to call this a dessert drink or a party drink and it is those things. But it is also the perfect cocktail to make whenever you think, “Hey, I deserve a treat today.” . . .

  • Purple Heather

    PH factor: 8.0 Recipe Ingredients: Cocktail o 1 ounce Johnnie Walker Black Label scotch o 1 teaspoon Crème de Cassis o 4 ounces Fever-Tree Premium Club Soda Method: 1. Stir all but the soda over ice in a mixing glass. 2. Strain into a cocktail glass. 3. Top with soda. Remarks: This is a good drink that's hard to classify. It's rather like a Kir Royale with an attitude. Enjoy. . . .

  • Qui to Freedom Cocktail

    PH factor: 8.5 Recipe Ingredients: Cocktail o 1 ½ ounces 1800 Silver tequila* o ½ ounce Campari o ¼ ounce Pernod Absinthe Supérieure o ¾ ounce fresh lime juice o ½ ounce Simple Syrup, see: Syrups etc. Garnish o lime peel Method: 1. Pour Campari into an ice-filled Old Fashioned glass. 2. Shake remaining cocktail ingredients over ice and add to the prepared glass. 3. Garnish with lime peel as pictured. Remarks: This is another unique cocktail created by Cody Goldstein of the Upholstery Store, NYC. *using Qui tequila would of course be more name appropriate . . .

    PH factor: 8.0 Recipe (Serves Two) Ingredients: Cocktail o 2 ounces 1800 Silver tequila o 1 ounce Cointreau o 8 ounces red wine Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve in large, ice-filled wine glasses. Remarks: This cocktail works best with food. It provides a refreshingly different accompaniment for lunch or dinner. . . .

  • Regal Dragon Cocktail

    PH factor: 9.0 Recipe Ingredients: Cocktail o 1 ounce Chivas Regal scotch o 1 ½ ounces Godiva Chocolate liqueur o ½ ounce dark Crème de Cacao Garnish o orange wedge o Tillen Farms Merry Maraschino cherry Method: 1. Shake cocktail ingredients over ice. 2. Serve up in a cocktail glass. 3. Garnish with a cherry and an orange wedge. Remarks: If you like Belgian chocolate liqueur and who doesn’t, you’re gonna love this cocktail. A word about naming. If it is made with Chivas Regal, then it's the Regal Dragon. If it's made with Johnnie Walker Red Label, it is the Red Dragon. Black Label; the Black Dragon. If you make it with Pinch, The Dimple Scotch, you’re on your own. . . .

Stir cocktail ingredients over ice in a mixing glass. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with a cherry. Remarks: Some like their Manhattan with bourbon. Some like their Manhattan with rye. Some like their Manhattan with scotch. That's called a Rob Roy. Don’t even ask us why. Some like their Manhattan “Perfected”. With equal parts sweet and dry. When a Rob Roy cocktail’s “Perfected”, it’s called an Affinity. We haven't a clue as to why. . . .

Stir cocktail ingredients over ice in a mixing glass. 2. Serve up in a cocktail glass. 3. Garnish with orange peel. Remarks: Similar to the classic Rusty Nail but it's a cocktail in its own right, and a tasty one at that. . . .

Strain into an ice-filled Old Fashioned glass. Remarks: Some suggest fresh lemon juice in place of the bitters. Could be worth a try although sometimes the simplest solution really is the best. . . .

    PH factor: 9.0 Recipe Ingredients: Cocktail o 1 ½ ounces Johnnie Walker Black Label scotch o ¾ ounce Chambord o ½ ounce cream o ¼ ounce Earl Grey Syrup, see: Syrups etc. Garnish o lemon peel Method: 1. Shake cocktail ingredients over ice. 2. Strain into a cocktail glass. 3. Express a lemon peel over the glass and discard. Remarks: The name comes from a 1933 film adaption of the Noel Coward comedy “Design for Living”. Two male friends find they love the same woman, and she loves them both. To protect their friendship, the men agree to a “No Sex Policy”. When she is alone with one of them and things are getting close, he tells her about the gentleman’s agreement. Then she tells him that she's no gentleman. . . .
