Shake cocktail ingredients over ice. 2. Serve over ice in a large wine glass. 3. Garnish with grated nutmeg. Remarks: This is a great coffee cocktail for whenever some perking up is required. The taste of absinthe is evident but not in a bad way. . . .

  • Morning Tonic

    PH factor: 8.5 Recipe Ingredients: Cocktail o 1 ½ ounces Hennessy VS cognac o 2 ounces cold brew coffee o 2 ounces of Fever-Tree Premium Tonic Water Garnish o grapefruit twist Method: 1. Combine cognac and coffee in an ice-filled Old Fashioned glass. 2. Top with tonic water. 3. Garnish with a grapefruit twist. Remarks: This is a refreshing brew for the morning after the night before or any other time a little perking up is required. . . .

  • Irish Tea Party Cocktail

    PH factor: 8.0 Recipe Ingredients: Cocktail o ¼ ounce Pernod Absinthe Supérieure o 1 ounce Tullamore DEW Irish whiskey o 4 ounces chilled Irish Breakfast tea o 1 dash of Simple Syrup, see: Syrups etc. Garnish o lemon peel Method: 1. Swirl absinthe in a double Old Fashioned glass and discard the excess. 2. Add ice and the remaining cocktail ingredients to the prepared glass and stir briefly. 3. Garnish with lemon peel. Remarks: Wonder what makes an Irish tea party a party? Might be the Irish whiskey. . . .

  • Tea and Whiskey Punch

    PH factor: 8.5 Recipe Ingredients: Cocktail o 1 ½ ounces Tullamore DEW Irish whiskey o ½ ounce Brown Sugar Syrup, see: Syrups etc. o 1 thick lemon slice o 8 whole cloves o 1 cup hot strong black tea Method: 1. Bring water to a boil in a saucepan. 2. Remove from heat, add tea, and let steep. 3. Add whiskey and syrup to a glass mug and stir to combine. 4. Stud the lemon slice with the cloves. 5. Halve the lemon slice and add it to the mug. 6. When steeped, pour the tea into the mug. Remarks: This is a tea for coffee drinkers and tea drinkers alike. Though it is perfect for a rainy day, you don’t need bad weather to enjoy this drink. . . .

  • A Smokin’ Hot Thyme Cocktail

    PH factor: 9.5 Recipe Ingredients: Cocktail o 1 ½ ounces Johnnie Walker Black Label scotch o ½ ounce Ilegal mezcal o ¾ ounce agave nectar o ¾ ounce fresh lemon juice Garnish o charred lemon wheel o thyme sprig Method: 1. Using a torch, char a lemon wheel and invert the glass over it to contain the smoke. 2. Shake cocktail ingredients over ice. 3. Serve up in the prepared glass. 4. Garnish with charred lemon wheel and thyme. Remarks: First thought: This is sweet and fruity. Second thought: Mmm, this is sweet and fruity! The charred lemon doesn’t add much smokiness, but it looks good floating there. . . .

  • Adonis Cocktail

    PH factor: 8.5 Recipe Ingredients: Cocktail o 1 ½ ounces Lillet Rouge o 1 ½ ounces Manzanilla sherry o 1 dash Hella Orange bitters or to taste Garnish o orange twist Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve up in a cocktail glass. 3. Express an orange twist over the glass and then discard. Remarks: This is a tasty combination. The bitters maintain the balance here. . . .

Stir cocktail ingredients over ice in a mixing glass. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with a thin apple slice. Remarks: This is very similar to the Good Cork cocktail from New York's Mayahuel Bar. A peat dried single malt scotch would have a significant impact when paired with the smokiness of the mezcal. . . .

Shake cocktail ingredients except champagne over ice. 2. Strain into an ice-filled collins glass. 3. Top with champagne. 4. Garnish with lemon twist. Remarks: This dates back to a time when the safe return of these canvas and wood flying machines was celebrated with champagne. . . .

  • Bloody Margarita Cocktail

    PH factor: 9.0 Recipe Ingredients: Cocktail o salt o 2 ounces 1800 Silver tequila o 1 ounce Cointreau o 2 ounces blood orange juice o ¾ ounce fresh lime juice o ¾ ounce agave nectar o 1 dash Hella Orange bitters Method: 1. Moisten rim of a cocktail glass and invert it into a shallow dish of salt to coat the rim of the glass. 2. Shake remaining cocktail ingredients over ice. 3. Strain into the prepared glass. Remarks: A margarita of a different color but a margarita all the same. Pleasant, fruity, and well worth the effort. . . .
