  • Mango Simple Syrup

    Recipe Ingredients: o Peel and flesh from 1 ripe mango or if making Mango Infused Spirits (see Infusions) use the peel and the unused mango flesh of that recipe o ¾ cup sugar o 1 ½ cup water Method: 1. Combine sugar and water in a saucepan and bring to a boil stirring to dissolve sugar. 2. Reduce heat, add mango and simmer stirring until the mixture reaches a syrup-like consistency. 3. Remove from heat pressing mangos to release as much juice as possible and let cool. 5. Fine strain into an airtight container using a paper filter. 6. Seal well and refrigerate. . . .

    Recipe Ingredients: o 1 cup canned lychees or fresh lychees peeled o 2/3 cup sugar o 1 cup of water Method: 1. Combine water and sugar in a saucepan and bring to a boil stirring to dissolve sugar. 2. Reduce heat, add lychees and simmer stirring until the mixture reaches a syrup-like consistency. 3. Remove from heat and press the lychees to release the juices and let steep for at least one hour. 4. Strain into an airtight container using a paper filter. 5. Seal well and refrigerate. . . .

  • Lime Cordial (uncooked)

    Recipe Ingredients: o 6-8 fresh ripe limes o sugar Method: 1. Wash and dry limes. 2. Peel limes avoiding as much white pith as possible. (A peeler with a serrated blade works well) 3. Julienne the peels and juice the limes. 4. Lightly muddle julienned peels in a glass container. 5. Add the lime juice and an equal amount of sugar stirring to dissolve the sugar. 6. Seal well and refrigerate for 24 hours. 7. Strain into an airtight container using a paper filter. 8. Seal well and refrigerate for an additional 24 hours before using. . . .
