Mango Simple Syrup

Ingredients:

o Peel and flesh from 1 ripe

mango or if making Mango

Infused Spirits (see Infusions)

use the peel and the unused

mango flesh of that recipe

o ¾ cup sugar

o 1 ½ cup water


Method:

1. Combine sugar and water

in a saucepan and bring to a

boil stirring to dissolve sugar.

2. Reduce heat, add mango

and simmer stirring until the

mixture reaches a syrup-like

consistency.

3. Remove from heat pressing

mangos to release as much juice

as possible and let cool.

5. Fine strain into an airtight

container using a paper filter.

6. Seal well and refrigerate.
