PH factor: 10 Recipe Ingredients: Cocktail o 1 slice of Fresno pepper o 1 dash Angostura bitters o 2 teaspoons maple syrup o 2 ounces 1800 Reposado tequila Garnish o orange peel o slice of Fresno pepper Method: 1. Muddle pepper and bitters, in a cocktail shaker. 2. Add ice and the remaining cocktail ingredients and shake. 3. Strain into an ice-filled Old Fashioned glass. 4. Garnish with orange peel and pepper slice. Remarks: This is a cocktail that deserves to be called unique. If Fresno peppers are not available, try Serrano chilis. They are closer in both taste and Scoville units to Fresno peppers than are the more ubiquitous Jalapeños. . . .

PH factor: 8.5 Recipe Ingredients: Cocktail o 1 ½ ounces 1800 Reposado tequila o ½ ounce Ilegal mezcal o ½ ounce Galliano liqueur o ½ ounce agave nectar o 1 dash Hella Citrus bitters o 1 dash Peychaud’s bitters Garnish o lemon twist Method: 1. Add cocktail ingredients to an Old Fashioned glass. 2. Add ice and stir to chill. 3. Garnish with lemon twist. Remarks: An interesting combination of flavors. The taste of Galliano dominates and with the agave nectar it makes this is a little sweet. As with all of our recipes feel free to tweak it and make it your own. . . .

Shake cocktail ingredients over ice. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with orange twist. Remarks: Originally this recipe called for multiple bitters and espresso. We feel preparing it as above makes it a more approachable cocktail. . . .

Muddle sugar and bitters in an Old Fashioned glass. 2. Add ice and bourbon and stir. 3. Garnish with cherry and orange peel. Remarks: The Old Fashioned is among the earliest cocktails and has certainly passed the test of time. A warming bourbon such as Woodford Reserve coupled with bitters will tickle one’s palette and ease one’s mind. Being able to munch a good cherry like one from Tillen Farms always feels like a reward for a drink well drunk. . . .

Stir over one large ice cube in a double Old Fashioned glass. 2. Express a long orange peel over the glass and drop it in as a garnish. Remarks: Created in 2007 by Phil Ward of the East Village Death & Co. it is good example of mezcal's flexibility. . . .

PH factor: 8.0 Recipe Ingredients: Cocktail o 1 ounce Woodford Reserve bourbon o 1 ounce Galliano o 1 dash each Angostura and Hella Orange bitters or to taste Garnish o lemon and orange peel Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Strain into an ice-filled Old Fashioned glass. 3. Express peels over the drink and drop in for garnish. Remarks: This drink is like the classic Old Fashioned. A sweeter, smoother, Old Fashioned to be sure. We omitted the sugar from the original recipe as the Galliano brings its own sweetness to the table. . . .

PH factor: 9.0 Recipe Ingredients: Cocktail o 2 ounces Johnnie Walker Black Label scotch o ¾ ounce Sambuca Romano o 2 dashes Angostura bitters or to taste o 1 ounce pineapple juice Garnish o pineapple wedge Method: 1. Shake cocktail ingredients over ice. 2. Serve up into a cocktail glass. 3. Garnish with pineapple wedge. Remarks: We tried this with a “sweeter” scotch and with a "drier" one. Either way it still tasted like Sambuca on the rocks. We thought increasing the scotch and decreasing the Sambuca would change that. It didn't. Finally, we added pineapple juice and we were glad we did. . . .
