PH factor: 8.5 Recipe (Serves Two) Ingredients: Cocktail o 2 cups Godiva Hot Cocoa made with coconut milk o 1 pinch sea salt o ½ teaspoon cinnamon o ½ teaspoon vanilla extract o 1 dash Hella Chili bitters o 2-3 drops of Bittermens Xocolatl Mole bitters o 2 ounces Clase Azul Reposado tequila Method: 1. Prepare cocoa according to package directions but using coconut milk. 2. Whisk in remaining cocktail ingredients except tequila and simmer for several minutes. 3. Remove from heat. 4. Add tequila and serve in glass mugs. Remarks: This drink is rich, chocolatey, y muy bueno. . . .

PH factor: 9.0 Recipe Ingredients: Cocktail o sugar o cayenne pepper o 1 ounce 1800 Añejo tequila o 1 ½ ounces Godiva Chocolate liqueur o ½ ounce Honey Syrup, see: Syrups etc. Method: 1. Moisten the rim of a martini glass and invert it into a shallow dish containing a mixture of sugar and cayenne to coat the rim of the glass. 2. Shake remaining cocktail ingredients over ice to chill. 3. Serve up in the prepared glass. Remarks: If you are still looking for a cocktail made with Godiva Chocolate liqueur that doesn’t taste good, we are very sorry to disappoint you yet again. PH factor: 9.5 Recipe Ingredients: Cocktail o 2 ounces 1800 Silver tequila o ¾ ounce Sambuca Romano o 1 ounce fresh lime juice o ¼ ounce agave nectar o 1 dash Hella Orange bitters o Fever-Tree Premium Club Soda Garnish o lime wedges Method: 1. Shake cocktail ingredients except soda over ice. 2. Strain into an ice-filled collins glass. 3. Top with soda. 4. Garnish with lime wedges. Remarks: This cocktail takes Sambuca into a whole new realm. It's not normally associated with tall glasses and sunshiny days. You will be surprised just how refreshing “Buca” can be. . . .

Moisten the rim of an Old Fashioned glass and invert it into a shallow dish containing a mixture of salt, lime zest, and chili powder to coat the rim of the glass. 2. Shake remaining cocktail ingredients over ice. 3. Strain into the prepared glass. 4. Garnish with lime wedge. Remarks: This is an interesting take on the classic. While its taste does not scream margarita, the salt on the rim gives it away. . . .

Muddle berries in a cocktail shaker. 2. Add ice and remaining cocktail ingredients except soda and shake to chill. 3. Fine strain into an ice-filled collins glass. 4. Top with soda. 5. Garnish with blackberries and lavender sprig. Remarks: Don Sabo’s Blackberry Lavender French Soda was the basis for this delicious low-ABV cocktail. . . .

PH factor: 8.0 Recipe Ingredients: Cocktail o 1 ½ ounces Mount Gay XO rum o ¼ ounce Lillet Rouge o ½ ounce Oloroso sherry o 1 ounce cold brew coffee o ¼ ounce agave nectar o 1 dash Angostura bitters Garnish o lemon peel Method: 1. Rinse cocktail glass with rum. 2. Combine excess rum with ice and remaining cocktail ingredients in a mixing glass and stir. 3. Ignite the rinsed glass and douse with the contents of the mixing glass. 4. Express lemon peel over glass and drop in for a garnish. Remarks: An interesting combination of flavors and a multistep process. Stirring well with ice will create some dilution. Not a bad thing with this cocktail. . . .

PH factor: 10 Recipe Ingredients: Cocktail o cinnamon stick o 3 whole cloves o 2 ounces Tullamore DEW Irish whiskey o ½ ounce Demerara Syrup, see: Syrups etc. o 2 ounces cold brew coffee Garnish o lightly whipped cream flavored with orange extract o grated nutmeg Method: 1. Crush cinnamon stick and cloves in a cocktail shaker. 2. Add ice and remaining cocktail ingredients and shake. 3. Fine strain into a glass mug. 4. Top with whipped cream. 5. Garnish with grated nutmeg. Remarks: The spices make this an obvious seasonal choice. However, given the wonderful flavor it may well become a year-round favorite. . . .

PH factor: 9.5 Recipe Ingredients: Cocktail o ¾ ounce Schladerer Edel-Kirsch liqueur o ¾ ounce Plymouth Sloe Gin o 2 ounces champagne Garnish o rosemary sprig Method: 1. Pour champagne into a cocktail glass. 2. Lightly bruise rosemary and add to the wine. 3. Slowly add sloe gin and Edel-Kirsch so that they sink to the bottom of the glass. Remarks: This is a cocktail in a class by itself. Edel-Kirsch and sloe gin combine to form a unique fruit flavor that you just have to try. . . .

Remarks: This has similar though fewer ingredients than the Kabuki Cocktail. As a result the taste of the orange liqueur is more noticeable here. . . .

Shake cocktail ingredients without ice. 2. Add ice and shake again to chill. 3. Strain into a martini glass. 4. Garnish with orange twist. Remarks: The ingredients may seem odd but, in combination, they are quite excellent. The maple syrup makes us think about breakfast. Campari and pancakes, anyone? . . .

Remarks: This is a Sloe Gin Fizz that gets its sparkle from champagne not club soda. Need we say more? . . .
