Stir to combine cocktail ingredients in a glass. 2. Slowly pour cream over a spoon. Remarks: This is what an Irish coffee or any caffeinated cocktail should be like. Not too sweet and not too bitter. With enough caffeine to perk you up but not enough to get you rattled. Unless that is you drink too many of them. . . .

Shake cocktail ingredients over ice. 2. Fine strain into a martini glass. 3. Garnish with coffee beans. Remarks: We like it but feel it could use more sweetness to balance the lime. But that could just be us. . . .

PH factor: 9.5 Recipe Ingredients: Cocktail o sugar o 1 ounce J. Wray Silver Jamaican rum o 1 ounce Tia Maria o 4 ounces hot coffee or espresso Garnish o whipped cream o grated allspice Method: 1. Moisten the rim of a cup or mug and invert it into a shallow dish of sugar to coat the rim of the cup or mug. 2. Add the remaining cocktail ingredients to the prepared cup. 3. Top with whipped cream. 4. Garnish with allspice. Remarks: This is what any fortified coffee should be; tasty and decidedly fortified. Whipped cream makes it sweet and the allspice makes it a little exotic. . . .

Stir cocktail ingredients in a warm mug to dissolve sugar. 2. Top with whipped cream and a sprinkle of brown sugar. Remarks: This is a fine cup of coffee as it is. Smoother than some and not as strong as some others. If you prefer something a bit stronger try adding more Calvados. The simplest solutions are often the best. . . .
