Muddle sugar and lemon in a cocktail shaker. 2. Add mint leaves and lightly muddle again. 3. Add ice, rum, and Pimm’s Cup and shake to chill. 4. Pour entire contents into a highball glass. 5. Top with club soda. 6. Garnish with mint sprig and strawberry slices and serve with a straw. Remarks: Looks like iced tea. Tastes like a mojito with a dark past. On the whole, this is an interesting summertime sipper. . . .

Stir cocktail ingredients over ice in a mixing glass. 2. Strain into a martini glass. 3. Pour cream over the back of a spoon to float it on top of the drink. 4. Garnish with coffee beans. Remarks: It pays to plan ahead. So make and chill your coffee first. To stir ice in warm coffee is not a good idea. Dilution is not your friend here. *lightly whip cream with a dash of vanilla extract until slightly thickened but still pourable. . . .

Moisten the rim of a martini glass and invert it into a shallow dish of cocoa powder to coat the rim of the glass. 2. Lightly press a chocolate kiss onto the bottom of the g lass. 3. Shake remaining cocktail ingredients over ice. 4. Serve up in the prepared glass. Remarks: The name says it all about the flavor of this “martini”.
