Muddle pineapple in cocktail shaker. 2. Add ice and remaining cocktail ingredients and shake. 3. Fine strain into a cocktail glass. 4. Garnish with pineapple. Remarks: Divorce is what happens when being told you are wrong about every single thing, every single day of your life just isn’t fun anymore. . . .

  • Maple Bacon Breakfast Martini

    PH factor:  9.5 Recipe Ingredients: Cocktail o 2 ounces Grey Goose vodka o ½ ounce Licor 43, Cuarenta y Tres o ½ ounce maple syrup o 1 egg white o 1 ounce cream Garnish o bacon Method: 1. Shake cocktail ingredients without ice. 2. Add ice and shake to chill. 3. Fine strain and serve up in a martini glass. 4. Garnish with crispy bacon, extra thick, please. Remarks: Some people may not like the idea of having meat in their martinis. To them we say it’s not meat, it’s BACON! . . .

  • The Turn of the Screwdriver

    PH factor:  8.5 Recipe Ingredients: Cocktail o 2 ounces Finlandia vodka o ½ ounce Licor 43, Cuarenta y Tres o 4 ounces Orangina Sparkling Citrus Beverage Garnish o orange peel Method: 1. Combine spirits in an ice-filled highball glass. 2. Add Orangina. 3. Garnish with a long thin spiral of orange peel and serve with a straw. Remarks: A bit of a twist on the venerable Screwdriver. The Turn is a very pleasant, easy to make cocktail. The taste of a Screwdriver can change with the oranges used. Orangina. on the other hand, gives you a pleasurable cocktail every time. . . .

  • Star Attraction Cocktail

    PH factor:  8.0 Recipe Ingredients: Cocktail o 2 ounces Flor de Caña Extra Seco rum o ¼ ounce Licor 43, Cuarenta y Tres o 1 ounce fresh lime juice o ¼ ounce grenadine o 1 teaspoon Simple Syrup, see: Syrups etc. Garnish o lime wheel Method: 1. Shake cocktail ingredients over ice. 2. Strain into an ice-filled cocktail glass. 3. Garnish with a lime wheel. Remarks: Alternatively, you can omit the grenadine and muddle 2 ripe strawberries in a shaker, add ice and the remaining cocktail ingredients, shake and strain into the ice-filled glass. . . .

  • Spanish Gin Fizz

    PH factor: 8.5 Recipe Ingredients: Cocktail o 1 ounce Bombay gin o ½ ounce Licor 43, Cuarenta y Tres o 1 teaspoon sugar o ½ ounce fresh lime juice o 4 ounces Fever-Tree Premium Club Soda Garnish o lime peel Method: 1. Shake cocktail ingredients except soda over ice. 2. Strain into an ice-filled collins glass. 3. Top with soda. 4. Garnish with lime peel. Remarks: This is different than most tall drinks with soda. The Licor 43 is the dominant flavor and with the Bombay gin gives this Fizz more body than most. . . .

  • Piña Colada 43

    PH factor:  8.0 Recipe Ingredients:       Cocktail o 2 pieces fresh pineapple o ¾ ounce Hennessy VS cognac o 1 ½ ounces Licor 43, Cuarenta y Tres o 1 ½ ounces coconut milk o 1 ½ ounces cream o 1 dash fresh lemon juice o sugar to taste Garnish o Tillen Farms Merry Maraschino cherry o pineapple wedge Method: 1. Muddle pineapple in shaker. 2. Add ice and remaining cocktail ingredients and shake to chill. 3. Serve up in a cocktail glass. 4. Garnish with a mint sprig and pineapple spear. Remarks: Though it's similar to the rum based Piña Colada, it is its own cocktail. It's well-balanced with or without an umbrella. . . .

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 ¾ ounces Licor43, Cuarenta y Tres o ½ ounce fresh lemon juice o Fever-Tree Premium Tonic Water Garnish o 3 thin cucumber slices Method: 1. Add Licor 43 and lemon to an ice-filled collins glass. 2. Top with tonic water. 3. Garnish with cucumber. Remarks: An easy-peasy lemon squeezy cocktail that will put you into a springtime frame of mind no matter the actual weather. . . .

  • Spanish Screwdriver

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 ounce Finlandia vodka o 1 ounce Licor 43, Cuarenta y Tres o 3 ounces fresh orange juice Garnish o cinnamon stick o orange slice Method: 1. Shake cocktail ingredients over ice. 2. Strain into an ice-filled Old Fashioned glass. 3. Garnish with orange slice and cinnamon stick. Remarks: This Screwdriver may be a bit excessive garnishment-wise. If you feel it is too sweet, try skewing the liquor to liqueur ratio in favor of the vodka. . . .

  • Vietnamese Coconut Coffee

    PH factor:  9.5 Recipe Ingredients: Cocktail o 1 ½ tablespoons sweetened condensed milk o 3 tablespoons coconut milk o 4 ounces cold Vietnamese coffee, see: Syrups etc. o 1 pinch sea salt o 1 ½ teaspoons sugar Method: 1. Blend 4 or 5 ice cubes to a sno-cone like consistency. 2. Add milks and briefly pulse to combine. 3. Pour into a highball glass. 4. Stir salt and sugar into the Vietnamese coffee. 5. Pour coffee mixture around the sides of the ice mixture in the glass. 6. Serve with a straw. Remarks: Feel free to add 1 ½ ounces of Rum Chata or, for a slightly less sweet coffee, add 1 ounce of Jamaican White rum to the above recipe. Our rating is for the coffee plus the Rum Chata. . . .

  • Morning Glory

    PH factor:  9.5 Recipe Ingredients: Cocktail o ¼ ounce Pernod Absinthe Supérieure o 2 ounces Remy Martin VSOP cognac o ½ ounce Grand Marnier o 1 dash Angostura bitters o 1 teaspoon Simple Syrup. see: Syrups etc. o 2 ounces champagne Garnish o lemon twist Method: 1. Swirl absinthe in an Old Fashioned glass to coat the glass and discard the excess. 2. Add ice to the glass and set it aside. 3. Stir remaining cocktail ingredients except champagne over ice in a mixing glass. 4. Strain in the prepared glass. 5. Top with champagne. 6. Garnish with lemon twist. Remarks: Our version of a cocktail that dates from the 1800s. Morning in Morning Glory refers to the fact that it was meant to be a hangover “cure”. We hope our revisions make it a cocktail that’s good for all occasions. . . .

  • Tree Hugger Cocktail

    PH factor:  8.5 Recipe Ingredients: Cocktail   o 1 teaspoon grated ginger o 2 ounces Woodford Reserve bourbon o ¾ ounce sake o 1 dash Simple Syrup, see: Syrups etc. o ½ ounce fresh orange juice o 1 ounce Fever-Tree Premium Ginger Beer Garnish o orange peel Method: 1. Muddle ginger in a cocktail shaker. 2. Add ice and remaining cocktail ingredients except the soda and shake to chill. 3. Strain into an ice-filled double Old Fashioned glass. 4. Top with ginger beer. 5. Garnish with orange peel. Remarks: As you might imagine, this cocktail errs on the side of ginger, but it is not a Mule. It more closely resembles a Fizz but it’s not quite one of those either. Those of you who like things that are hard to define and that taste like ginger will happily embrace one of these. . . .

  • Not Too Late, Tonic

    PH factor:  8.5 Recipe Ingredients: Cocktail o 1 ounce Bombay gin o ¼ ounce dark Crème de Cacao o ¾ ounce decaf cold-brew coffee o ½ ounce Cardamom Allspice Cordial, see: Syrups etc. o Fever-Tree Premium Tonic Water Garnish o mint sprig Method: 1. Shake cocktail ingredients except tonic over ice. 2. Strain into an ice-filled collins glass. 3. Top with tonic water. 4. Garnish with mint sprig. Remarks: When we first looked at this we said, “Really?" "Are we really doing this?” Well we did, and it turned out to be a refreshing cocktail that is very good with food. . . .
