PH factor: 8.0 Recipe Ingredients: Cocktail o 1 ounce Woodford Reserve bourbon o 1 ounce Johnnie Walker Black Label scotch o ½ ounce Ilegal mezcal o 1 dash Angostura bitters o 2-3 drops Bittermens Xocolatl Mole bitters Garnish o orange twist Method: 1. Stir cocktail ingredients over ice in a mixing glass. 2. Serve over a large ice cube in an Old Fashioned glass. 3. Garnish with orange twist. Remarks: If it's late and you're a regular. PH factor: 9.0 Recipe Ingredients: Cocktail o 3-4 blackberries o ½ ounce fresh lemon juice o ½ ounce Honey Syrup, see: Syrups etc. o 2 ounces Johnnie Walker Black Label scotch o 1 ounce Crème de Mûre Garnish o lightly whipped cream flavored with honey Method: 1. Muddle blackberries, honey syrup, and lemon juice in a cocktail shaker. 2. Add ice and the remaining cocktail ingredients and shake to chill. 3. Fine strain into a martini glass. 4. Garnish with whipped cream. Remarks: If you like blackberries and Black label, The Black Scot is the drink for you. . . .

Irish whiskey o ½ ounce Sandeman Porto Tawny 20 Year Old o 1 ounce Honeysuckle and Pepper syrup* o 1 dash Angostura bitters or to taste o 1 egg Method: 1. Shake cocktail ingredients without ice. 2. PH factor: 8.0 Recipe Ingredients: Cocktail o 1 cucumber slice o 4 mint leaves o 1 dash Simple Syrup, see: Syrups etc. o 1 ounce Bombay gin o 1 ounce Pimm’s No.1 Cup o 1 ounce fresh lime juice Garnish o cucumber slice o mint sprig Method: 1. Muddle cucumber, mint, and syrup in a cocktail shaker. 2. Add ice and remaining cocktail ingredients and shake to chill. 3. Strain into an ice-filled Old Fashioned glass. 4. Garnish with cucumber and mint sprig. Remarks: We have quite a few cocktails with cucumber. Many of them also feature Pimm’s No.1 Cup. All of them are tasty. This is no exception. . . .

PH factor: 9.0 Recipe Ingredients: Cocktail o 1 ounce Woodford Reserve bourbon o 1 ounce Bombay gin o 1 dash Angostura bitters o 1 splash of fresh lime juice o 4 ounces Fever-Tree Premium Ginger Beer Garnish o mint sprig o orange wedge Method: 1. Shake cocktail ingredients except ginger beer over ice. 2. Empty contents directly into a highball glass. 3. Top with ginger beer. 4. Garnish with orange wedge and mint sprig. Remarks: Created in 1942 by Joe Scialom of Cairo's Shepheard's Hotel. One morning a bloke suffering from the excesses of the previous evening, reappeared at his bar. Mr. Scialom taking pity on him created this as a cure for his condition. . . .

Shake cocktail ingredients except soda without ice. 2. Add ice and shake to chill. 3. Fine strain into a hurricane glass. 4. Carefully add soda to fill the glass. Remarks: This is a rich, tasty, attractive, cocktail that should definitely be served with a straw. . . .

Serve up in a martini glass. 3. Garnish with an orange twist. Remarks: Named after the 1919 hit song Yaaka Hula Hickey Dula (Hawaiian Love Song). Though this phrase was obviously made up it actually does make you think of Hawaii. As you drink this cocktail you will also think of beaches and palm trees, no matter where you happen to be drinking it. . . .
