    PH factor: 9.0 Recipe Ingredients: Cocktail o kosher salt o 2 ounces 1800 Silver tequila o ¾ ounce Thai Chili-infused Aperol, see: Syrups etc. o ½ ounce Simple Syrup, see: Syrups etc. o 1 ounce grapefruit juice o ½ ounce fresh lime juice o 3 ounces Fever-Tree Premium Club Soda Garnish o lime wheel Method: 1. Moisten the rim of a collins glass and invert it into a shallow dish of kosher salt to coat the rim of the glass. 2. Shake cocktail ingredients except soda over ice. 3. Strain into the ice-filled prepared glass. 4. Top with soda. 5. Garnish with lime wheel. Remarks: We enjoyed this drink very much. We also tried it with straight Aperol and found the cocktail made with the infused version to be much more interesting. . . .

We substituted rye for a cleaner taste. Either way this is one very good cocktail. . . .

Remarks: We have quite a few Pimm’s No.1 Cup cocktails several of which are mixed with ginger beer. This may be the easiest to make and to drink of all of them. Wray & Nephew Silver rum o 1 teaspoon Goslings Black Seal 151 proof rum o 1 ounce Grand Marnier o 1 ounce fresh lime juice o 2 ounces fresh orange juice o 2 ½ ounces pineapple juice o ½ ounce grenadine o ½ ounce orgeat syrup Garnish o pineapple wedge Method: 1. Shake cocktail ingredients except the Goslings over ice. 2. Strain into an ice-filled hurricane glass. 3. Float the 151 on top. 4. Garnish with pineapple wedge. Remarks: Created by Donn Beach of Don the Beachcomber fame. It was intended to be a hangover cure. This actually makes sense if you ascribe to the notion that the way to deal with a hangover is to never get sober. . . .

Wray Silver Jamaican rum o 1 ounce Godiva Milk Chocolate liqueur o ½ ounce Honey Syrup, see: Syrups etc. o ½ ounce cream Garnish o strawberry Method: 1. Shake cocktail ingredients over ice. 2. Serve up in a martini glass. 3. Garnish with strawberry. Remarks: Not overly sweet, thanks to the honey syrup. The taste of honey goes extremely well with the milk chocolate liqueur. . . .
