Lemon Squash

Ingredients:

o ½ cup plus 2 tablespoons sugar

o 1 cup water

o ½ cup fresh lemon juice


Method:

1. Dice the rind of three juiced

lemons and combine with water

and sugar in a saucepan.

2. Bring to a boil stirring to

dissolve the sugar.

3. Reduce heat, add juice

and simmer stirring until it

reaches a syrup-like

consistency.

4. Remove from heat.

5. Let cool and strain into an

airtight container discarding

the solids.

6. Seal well and refrigerate.
